Isn’t it your dream to sit at a long dinner table surrounded by mountains while eating the freshest foods of the season? Well, it is mine and I’m sure many other people share in this delicious fantasy. Last weekend we, along with our latest addition Everett, got the chance to sit at the Wasatch Mountain Dinner Table at Solitude Mountain Resort and it was magical.
Our meal started with this bright peach salad over purple mizuna soaked in Slide Ridge honey wine vinegar and topped with local cheese. And lucky for all of us locals, you can pick up most of the ingredients for this salad at the local downtown Salt Lake City Farmer’s Market.
Our second course was a pasta that may go unrivaled this Summer, a house-made pasta with pancetta, fresh peas, yellow tomatoes, and a surprise egg ender the pasta. Once you broke open the egg yolk the dish turned into something beautifully creamy and decadent.
Everett took a break from the table had a little Wasatch Mountain Table of his own.
Fresh salmon from Fog River was our next indulgence. This perfectly cooked salmon was served over a bright spring pea sauce, with new potatoes, ripe tomatoes and watercress. The sauce warranted a spoon and bread to sop up all of the goodness. Josh might not have resisted licking his plate on this one.
If we needed a spoon for the previous courses, we really needed one now! This almond berry tart topped with ice cream and caramel sauce was so good we were tempted to lick our plates (don’t worry though, I resisted).
Solitude Mountain Resort provides a stunning backdrop for an elegant dinner. We made new friends and were inspired by new cuisine and wine, making it a evening dreams are made of!
