SLCmixer: Holiday Cookies with Two Peas and Their Pod

In perfect timing for holiday baking, one of our last mixers of the season was Holiday Cookie Making with Maria from the popular blog Two Peas and Their Pod.  We talked cookies, ate cookies and made cookie dough, enjoying every minute of the deliciousness.

Maria and Josh generously offered their time and expertise for the afternoon.  We got to hear all about how they got their start as bloggers- from communicating with family about their live – to what it is today – a family friendly documentation of their lived shared in the kitchen. It was beautiful to see a couple so joyfully working alongside each other in the kitchen and in business, and their cute little guy, Caleb, perfectly completes their happy family.

Also joining us for the morning of cookies, was Annalise from the baking blog Completely Delicious.  Her and Maria led the discussion on cookie baking tips.  Here are a few of their insights:
Don’t overbake the cookies, remove them from the oven just before they’re done then let them rest on the baking sheet for about 2 minutes before you transfer then to the cooling rack. This will let them to finish cooking but still have a perfectly chewy texture.
In all cookie recipes let your butter come to room temperature before creaming it with the sugar (I’ve learned this the hard way) and they also prefer unsalted butter in baking so that you can adjust the saltiness by adding salt yourself.
To avoid flat cookies, add more flour and make sure your baking soda is fresh.  Also, a good recipe always lends itself to the perfect cookie.
