Creminelli Artisan Meats

Creminelli’s New Line of Artisan Meats

Reviewed by Becky
I was honored recently to meet the visionary of Creminelli Meats, Cristiano Creminelli. I have tasted Creminelli Salami before but this was my first time to meet the maker.  His face lit up with excitement as he shared the story his company and his passion for artisan meats. He spoke about how important it is to love what you do and how he looks forward to his work every day. I would describe him as spirited and passionate but his meats are what prove his zeal.

About a year ago, my eyes were opened to the world of salami and the fine Italian meats of Creminelli, which I blogged about here, and since then I’ve been bragging about how good we have it here in Utah to have access to some of the finest salami crafted in the world.

At this recent tasting, I was fortunate to taste all of the latest creations of Cristiano. His new line includes a variety of meats, not just salami, but pancetta, prosciutto, mortadella and more. We walked into the room guided by the aroma of fresh meats that filled the air, a rich smell that is scarce today. As I sampled the new line, it was hard to pick a favorite.  I truly loved them all, but if I had to pick one it would be the Calabrese Salami, which was dense and spicy with fermented red pepper and garlic.  I also really enjoyed the Mocetta, a dried beef eye of round seasoned with salt and pepper.  It was a pure slice of dried meat, with hardly any fat making it crisp.

I met up with Artisan Chocolatier, Ryan Kendrick, and Food Writer, Heather King, and asked them which of the new selection would be their favorite meats.  Ryan’s favorites were the Felina, one of the most ancient salami recipes on record, and the Mocetta.  Heather raved about the Coppa, dried pork shoulder, and Capicola, cooked pork shoulder seasoned with clove and rosemary. We all agreed agreed that the Sopressa, a coarsely ground pork fermented with wine and garlic, is a must try! Later we found out that the Sopressa has been recognized by more than just the three of us, and has been recently awarded as a silver finalist at the Sofi awards.

Summer is slowly coming around the corner and I await the day I can grab a selection of fresh meats along with a baguette and some olives for a picnic in the park or a concert at Red Butte Garden. To sample the new line of Creminelli, you can visit Tony Caputo’s, Whole Foods at Trolley, Liberty Heights Fresh, or Harmons.
