A Farm to Table Meal at The Viking Cooking School in Salt Lake City

Glancing down the grand table you see a line of wine glasses, several salt varieties, apron-wearing guests, and several family style bowls of delicious fresh foods.

Last week, foodies gathered at the Viking Cooking School in Salt Lake City to experience their ‘Farm to Table’ class first hand.  Together we teamed up to make a seasonally fresh meal with local ingredients.

We began the evening challenging our palates with a salt tasting.  With tasting classes popping up around the city like chocolate and cheese tastings, this salt tasting was especially fun, learning the difference between several varieties and then concluding which was our favorite.  Most of us found the truffle infused salt was to be the best salt of the evening.
After exploring the salt world we went on to preparing our meal together.  Here was the menu for the evening:
2 Seasonal Salsas: Fresh Fruit Salsa and Vegetable Salsa
Seasonal Soup
Market Salad with Applewood-Smoked Bacon
Farm-Fresh Rustic Vegetable Tart
Fresh Fruit Cobbler with Homemade Fruit-of-the-Season Ice Cream

The Viking Cooking School offers participation in the cooking, which involves eating the food you’ve created while learning new techniques from the chefs.  They highly value home cooking at Viking Cooking School.   They observe that the home chef must do all of the steps to create a meal with little or no help while restaurant chefs have specific tasks with much help in the kitchen.  At this cooking school you will learn many helpful tips to make great meals from scratch.
