Who: Isabel Mejia. Nutrition Coach

What she ate: Huevos Rancheros. (and she ate with excellent portion control I might add)

A typical breakfast for you: ‘I change up my breakfast every day so I stay balanced and don’t get bored of the same thing. Oatmeal, Toast with peanut butter & fruit, breakfast tacos, crepes & waffles on occasion, eggs sparingly, and I do enjoy veggie omelets. Really anything with the word breakfast in it. I’m game for anything!’

Your dream breakfast: Baleadas Hondurenas, a traditional breakfast in Honduras that my mom still makes. It is made with a homemade flour tortilla, eggs, crema, beans and queso fresco.

Why Salt Lake City: My family lived here and life just kind of took me here but now I really enjoy it. I originally moved here from LA to be close to my mom but then I went back to school and started working here and now I really enjoy helping people lead healthy lives in Utah.

Hometown: LA and now Salt Lake.

Who: Evan Lewandowski. Sommelier for Pago and Wine entrepreneur in Utah

What he ate: Chicken and Waffles from Pig & A Jelly Jar, 7:30am

What’s a typical breakfast for you: ‘I normally don’t eat a lot, maybe just some Wallaby yogurt with fruit, chia seeds and muesli.’

Your dream breakfast: ‘My dream breakfast would be more of a brunch around 11am and would involve bubbles of some sort.’

Why Salt Lake City: ‘I chose Salt Lake because of the community and the counter culture here. In hopes of a future vineyard here, this is actually a good spot for wine. What makes Utah great for skiing and biking also makes it great for wine growing. It’s not Alssass or Argentina but the unusualness of Utah’s climate and landscape is what will make the wine so unique.’

Hometown: ‘Although I wasn’t born here and didn’t grow up here, Salt Lake City is home’

stay up to date with Evan and his wine wanderings on twitter @EvanLewski. Also, be keeping a look out for a winery soon and eventually a local vineyard.

Who: Nash Martinez. Fixture Designer & Builder for commercial and retail projects.

Favorite Breakfast in town: the breakfast sandwich at Cafe Niche

What’s a typical breakfast for you: ‘It’s often a meal I skip.’

Your dream breakfast: ‘One that is nostalgic, like the corn pops cereal I had as a kid or my grandma’s homemade tortillas with beans, rice, eggs, and meat. Grandma Poopsie (that’s what we liked to call her) would wake up every morning, rain or shine, and happily make breakfast for whoever else might join her. She did this up until her early 90’s.’

Why Salt Lake City: ‘I love the pioneering nature of Salt Lake. There’s lots of opportunity to become a part of the city and not get lost in the city. I think it’s the spirit of the west, where you can carve something out and stand out here. There’s also the beauty of the city. I enjoy partaking in nature here more than I was able to before. But the biggest reason we chose Salt Lake was to be a part of a community here, an adventure lived out through relationships that will continue for a long time to come.’

Hometown: ‘Wherever I live is my hometown. I was born in Kirkland, WA.’

you can find Nash’s lighting at CG Sparks for sale or displayed at Pallet
